With a reputation for cuisine, service and a dining experience of unparalleled quality, chef proprietor Nobu Matsuhisa works only with the finest. The pivotal roles of Head Chef, Sushi Chef and General Manager for his Perth restaurant will be filled by:

Head Chef - Nicolas Mazier

Mazier takes up the reigns as Head Chef, previously holding the position of Executive Sous Chef at Nobu Florida. Eagerly anticipating the move to Perth, Mazier is keen to show off his creative skills and masterful plate design. The Frenchman has a passion for Japanese, Mediterranean and French cuisine, which encompasses Nobu’s food philosophy of combining classical training and knowledge of international cuisines to create modern Japanese masterpieces.

Sushi Chef – Asao Tsukayama

Tsukayama has been appointed Sushi Chef and comes to Nobu Perth from Nobu Los Angeles, and prior to that, Nobu’s namesake restaurant, Matsuhisa. Tsukayama is a master of sushi and will be charged with slicing, dicing and delivering fresh and colourful seafood creations to diners.

General Manager – Casper Khamphouy

Khamphouy is taking the next step on his Nobu journey having worked for the restaurant chain since 2005. His experience at a number of Nobu restaurants around the world, including Dubai and most recently Los Angeles, has given Khamphouy exceptional international experience that will see Perth diners enjoy a level of service second to none.

Nobu Perth, located on the site of the former Swan Room and overlooking the pool and tropical gardens, promises diners a theatrical dining experience complete with two semi-private teppan stations and two private dining rooms, perfect for entertaining clients or celebrating with family and friends.

Another unique feature will be a Sake Bar boasting an extensive sake menu. Mazier and his team of chefs will delight Perth diners with Nobu’s renowned signature dishes including yellowtail sashimi with jalapeno, tiraditio Nobu-style and black cod with miso.

An exclusive VIP, invitation only Sake Ceremony will be held later in 2011 to celebrate the opening and it is hotly anticipated that Nobu’s famous partner, actor Robert de Niro, will be in attendance.

The Sake Ceremony, or Kagami biraki as it is traditionally called, is a Shinto celebratory event in which the lid of a sake barrel is broken open by a wooden mallet representing an opening to harmony and good fortune, and the sake is served to everyone present. Tradition holds that a person must never pour their own sake; instead another person pours for you, and you do the same for them.

Burswood welcomes the opportunity to work with a food empire which spans the globe and the opening of Nobu further endorses Burswood as the premium wining and dining precinct in WA.

Burswood’s premium restaurant portfolio currently includes (A)LURE, Neil Perry’s Rockpool Bar & Grill, Yu Restaurant and Modo Mio Cucina Italiana, bringing the total to 19 combined restaurants and bars.
