Yú’s culinary team is led by renowned Chef de Cuisine, Pat Cheong, who draws on more than 25 years of experience in prestigious establishments. The renowned Diamond Restaurant in Hong Kong is where Pat learned the fastidious attention to detail that has become his trademark - before moving to Perth in the early 1980s. Joining Burswood in 1993, Pat played an integral role in the award-winning success and tradition of Genting Palace at Burswood, and has been recognised both internationally and within the local community for his outstanding work.
As the eighth in a family of 13 children, Pat has the lucky number eight on his side. He enjoys creating Yú’s signature dishes, including Peking duck, fillet steak with Szechuan or Cantonese sauce, Portuguese crab and sea salt prawns.

Daniel Man commenced his career at the Peninsula Hotel in Hong Kong in 1974. He went on to become the Manager of the prestigious Chinese restaurant in Hong Kong’s Regent Hotel before being enticed by Perth in 1990.
Daniel joined Burswood in 1992 and by 1996 he was the Restaurant Manager for Genting Palace, the benchmark restaurant that lifted Chinese fine-dining in Perth to a truly international standard. Daniel oversaw the restaurant’s transformation to Yú, and has been delighted with the way it continues to progress, growing its reputation surely with every dish.
